Chocolate chip muffin

Small story point: What is a muffin? These are small individual cakes related to madeleines. It was in the eleventh centuries that they appeared in Wales, this pastry is very common in the Anglo-Saxon countries, especially in the United States. The origin of its name is controversial, is it a French name which started from the word "mufflet" or German starting from the word "muffe"?


In any case, the muffin is a small cake that adapts to all tastes: chocolate chips, plain, fruit, nuts and even exists in a savory version!


I present to you today my vegan version, which I am sure will satisfy your taste buds.


 

  • 175g of flour T65

  • 1 tsp of tapioca starch

  • 11g of baking powder

  • 1 pinch of salt

  • 4 tbsp of agave syrup

  • 3 tbsp of melted margarine

  • 130ml of soy milk

  • 1/2 tsp apple cider vinegar

  • 8 raspberry extract drops (optional)

  • 70g of chocolate chip

  • 2 tbsp of chocolate powder

 

- Preheat the oven to 220 ° c. - In a bowl, mix the flour, baking powder, starch and salt. - Then add the melted margarine, the agave syrup; stir well and gradually add the milk, vinegar and raspberry extract. - Roughly chop 70g of chocolate to make chips; mix them into the dough as well as the powdered chocolate. - Oil or put margarine in the muffin tin to prevent the dough from sticking during cooking, put the dough in it, fill each location 3/4 full. - Bake at 180 ° C for about 20min.
