I present to you today my "galaxy" pie. This is a blackberry and white chocolate tart from the Ichoc brand (very good brand of vegan chocolate, with very reasonable prices compared to other brands of vegan chocolate).
I take this recipe to talk about another of my passions which is astronomy.
What is a galaxy?:
A galaxy is a sprawling system made up of dust, gas, dark matter, and billions of stars, all of which is maintained by gravity.
It is believed that virtually all galaxies contain supermassive black holes at their centers.
It is in these immense complexes that the various bodies of the cosmos are born and die, including the stars and the planets.
Did you know? Our galaxy is called "the Milky Way", it is a spiral galaxy, containing between 200 to 400 billion stars and at least 100 billion planets. The name "Milky Way" comes from the Greek "Via Lacta" e which means "galactic circle", "milky circle" or "milky circle".
From our point of view, that is to say from the Earth, it appears to us like a shimmering whitish band. Why? Because our Solar System is located on the edge of its disc-shaped structure.
The galaxy closest to our (Milky Way) is called Andromeda, it is visible in the constellation of the same name (The constellation of Andromeda), it is also a spiral galaxy.
Good to know: The Andromeda galaxy and the Milky Way are approaching at a speed of 140 kilometers per second. They will collide in 2.5 billion years. Which gives us leeway before seeing it from our window!
Let's go back to our recipe:
The necessary ingredients are flour, almond powder, blond sugar, icing sugar, margarine, soy milk, salt, starch, unsweetened chocolate powder, frozen blackberries, water, agar agar, white chocolate and coconut cream.
The necessary utensils are a removable pie dish, a large bowl, a measuring cup, a kitchen scale, teaspoon, tablespoon, baking paper, a spatula, a rolling pin, a bowl, a colander, a whisk.

Ingredients:
The pie crust:
200g of flour
30g of almond powder
50g of blond sugar
30g of icing sugar
80g of margarine
100ml soy milk
1 pinch of salt
10g of cornstarch
1 tsp unsweetened powdered chocolate (optional)
The garnish:
250g of frozen blackberries
150ml water
3 tbsp of light sugar
1 tsp of agar agar
The topping:
160g of white chocolate
160g of coconut cream
For the crust:
- In a large bowl, mix together the flour, almond powder, sugars, starch, chocolate powder and salt.
- Melt the margarine (in the microwave or in a saucepan) and incorporate it into the ingredients present in the large bowl.
- Mix everything with a spatula. Then add the milk and mix, then form a ball.
- Knead it a little on a clean work surface, add a little flour if everything is too sticky (but not too much!)
- Cut out a round of baking paper, put at the bottom of your pie mold, use your hands and a rolling pin to properly place the pie dough in the mold and bake for about 30min at 180 ° c (356°F).
- Put aside.
For garnish:
- Put in a saucepan about 60ml of water and the blackberries.
- Heat over medium / high heat.
- In a bowl next to it, pour the rest of the water and the teaspoon of agar agar, mix a little and leave.
- Using a fork, mash the blackberries during cooking.
- When everything forms a blackberry puree, add the water with the agar agar as well as the sugar (it doesn't matter if there are still pieces left, it's normal).
- Mix everything, always on a medium / high heat for a few minutes.
- Take a colander and filter the blackberry puree by mixing it with a tablespoon over a salad bowl.
- Then pour over the pie crust.
For the topping:
- In a saucepan, pour the coconut cream, heat 2, 3 min over low / medium heat.
- Incorporate white chocolate, cut into coarse pieces.
- Gently stir everything until the chocolate is melted then whisk for a few moments.
- Let cool a little then pour gently in the center of the tart on the fruity part.
- Using a chopstick form circles, swirls, start from the edge of the tart to the center to bring fruit into the chocolate part.
- Put in the fridge one night before unmolding and then enjoy.
