We're back with a gluten-free recipe, but this time with muffins! My best friend's short stay in Amsterdam made me want to make sweet gluten-free recipes to please her. Vegan and gluten free pastries are not found on every corner, even here and it's always better to make things yourself! Here you will find a very simple recipe, which will change a bit of pastries made from wheat flour.
110g of rice flour 80g of almond powder 2 tbsp of chickpea flour 16g of baking powder 1 big pinch of salt 4 tbsp of agave syrup 4 tbsp extra virgin coconut oil 110ml vanilla soy milk 1 teaspoon of vanilla extract 2 tbsp of chocolate powder 70gr of chocolate chips
- Preheat your oven to 180 ° c. - In a bowl, mix together the flours, almond powder, yeast and salt. - Add the coconut oil, agave syrup, vanilla extract, and milk while stirring with a wooden spoon. -Then incorporate the chips and the chocolate powder. - Oil or put a little margarine in your muffin tins and fill it with your batter. - Bake at 180 ° C for about 25min, check with a toothpick or a knife tip that they are well cooked inside before taking them out. - Let them cool before unmolding them and enjoy :)
