The famous yogurt cake, it's my favorite cake, simple, light, effective ! The best !
I made this cake a lot when I was vegetarian, and I continued when I became vegan by adapting the recipe.
No need to complicate life, eggs are not essential in a cake. You will also find on the L214 website all the information you need to replace eggs in your dishes.
Historical anecdote: The cake appeared in France in 1950 after the generalization of yogurt in 1945 after the end of the Second World War.
The traditional recipe is very basic: flour, sugar, oil, eggs, yeast and lemon zest.
We will therefore stay in the same spirit a basic, delicious to consume at breakfast, as a snack or as a dessert. (it's also allowed during the coffee break ;) )
100g of plain soy yogurt
130g of flour
100g of blond sugar
2 tbsp of sunflower oil
16g of baking powder
1/2 tbsp of cider vinegar
3 tsp of lemon juice
1 tbsp of agave syrup
2 tbsp of poppy seeds
3 drops of lemon extract
- Preheat the oven to 180°c.
- In a large bowl, put the following ingredients in this order, while mixing as you go:
Baking powder, yogurt, sunflower oil, sugar, agave syrup, vinegar, lemon juice flour, poppy seeds and lemon extract.
- Lighty oil your cake mold before putting the dough and bake it for about 30min (watch out for the baking by sticking the blade of a knife into your cake).
- Sprinkle with icing sugar if you wish and enjoy ! (at home the cake didn't last long, the next morning it was completely eaten!)
